Walking Taco Casserole

This walking taco casserole is hearty, cheesy, and packed with bold Tex-Mex flavor. An easy one-dish recipe perfect for busy weeknights and family dinners.

Ingredients
  

  • 1 lb 450 g ground beef
  • 1 tablespoon olive oil
  • 1 packet taco seasoning or homemade equivalent
  • 1 cup crushed tortilla chips or corn chips
  • cups shredded cheddar or Mexican-blend cheese
  • 1 cup canned diced tomatoes drained
  • ½ cup canned corn drained
  • Salt and black pepper to taste
  • Optional Toppings after baking:
  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Sliced green onions
  • Jalapeños

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add ground beef and cook until browned; drain excess grease.
  4. Stir in taco seasoning and mix well.
  5. Spread the seasoned beef evenly in a greased baking dish.
  6. Sprinkle crushed tortilla chips over the beef layer.
  7. Add tomatoes and corn evenly across the dish.
  8. Top with shredded cheese.
  9. Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.
  10. Let rest 5 minutes before adding fresh toppings and serving.

Notes

  • Add crunchy toppings after baking to keep texture.
  • Adjust seasoning and spice level to taste.
