Method
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned; drain excess fat if needed.
- Add onion and cook until softened, about 4–5 minutes.
- Stir in garlic and cook for 30 seconds.
- Add chili powder, cumin, and paprika; stir to bloom spices.
- Mix in tomato paste and crushed tomatoes.
- Add beans and beef broth; stir well.
- Bring to a gentle simmer, then reduce heat.
- Simmer uncovered for 30–45 minutes, stirring occasionally.
- Season with salt and pepper to taste before serving.
Notes
Simmer longer for thicker chili and deeper flavor.
Chili tastes even better the next day.
