- Season the pork chops lightly with salt and pepper and place them in the slow cooker.
- In a bowl, whisk together honey, garlic, soy sauce, broth, ketchup, and vinegar. Pour the sauce over the pork chops, making sure they’re well coated.
- Cover and cook on low until the pork chops are tender and cooked through.
- For a thicker sauce, remove the pork chops and transfer the sauce to a saucepan. Simmer with the cornstarch slurry until thickened, then pour over the pork before serving.
Notes
Thicker pork chops stay juicier during slow cooking.
Searing the pork before slow cooking adds extra flavor (optional).
Adjust sweetness by reducing honey slightly if preferred.
