A creamy, comforting pasta dish inspired by classic chicken pot pie—loaded with tender chicken, vegetables, and a rich sauce.

Ingredients
  

  • 12 oz pasta
  • 3 tbsp butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 tbsp flour
  • 2 cups chicken broth
  • cups milk or half-and-half
  • 2 cups cooked chicken
  • 2 cups frozen mixed vegetables
  • 1 tsp thyme
  • Salt & pepper

Notes

• Rotisserie chicken works perfectly.
• Add extra broth if sauce thickens too much.
• Great for leftovers and meal prep.
