Pineapple Chicken and Rice

A comforting and balanced pineapple chicken and rice dish made with tender chicken, fluffy rice, and juicy pineapple. Easy to prepare, family-friendly, and perfect for busy weeknights or meal prep.

Ingredients
  

  • 2 cups cooked chicken diced
  • 1 cup long-grain white rice uncooked
  • 1 ½ cups chicken broth
  • 1 cup pineapple chunks well drained
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp soy sauce or low-sodium
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt to taste

Method
 

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat olive oil in a pan and sauté onion and garlic until fragrant.
  3. Add diced chicken and cook until lightly golden.
  4. Stir in rice, pineapple, soy sauce, and spices.
  5. Transfer mixture to the baking dish and pour in chicken broth.
  6. Cover tightly with foil and bake for 35–40 minutes, until rice is tender.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Drain pineapple well to avoid excess moisture.
  • For extra flavor, marinate chicken briefly before cooking.
  • Adjust seasoning at the end to balance sweet and savory.
