Ingredients
  

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 lb boneless skinless chicken breasts or thighs, cubed
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup half-and-half or heavy cream
  • 1 cup carrots sliced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • Salt & black pepper to taste
  • 16 oz potato gnocchi shelf-stable or refrigerated

Method
 

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion and cook until soft. Stir in garlic and cook 30 seconds.
  3. Add chicken and cook until lightly browned.
  4. Sprinkle flour over the mixture and stir well.
  5. Slowly add chicken broth, stirring until smooth.
  6. Add carrots, thyme, salt, and pepper. Bring to a gentle simmer.
  7. Stir in cream, then add gnocchi and peas.
  8. Simmer 5–7 minutes until gnocchi are tender and sauce thickens.
  9. Taste and adjust seasoning. Remove from heat and rest briefly before serving.

Notes

Simmer gently to avoid over-thickening.
Add a splash of broth if sauce becomes too thick.
