Method
- Heat butter and olive oil in a large pot over medium heat.
- Add onion and cook until soft. Stir in garlic and cook 30 seconds.
- Add chicken and cook until lightly browned.
- Sprinkle flour over the mixture and stir well.
- Slowly add chicken broth, stirring until smooth.
- Add carrots, thyme, salt, and pepper. Bring to a gentle simmer.
- Stir in cream, then add gnocchi and peas.
- Simmer 5–7 minutes until gnocchi are tender and sauce thickens.
- Taste and adjust seasoning. Remove from heat and rest briefly before serving.
Notes
Simmer gently to avoid over-thickening.
Add a splash of broth if sauce becomes too thick.
