One Pot Cheesy Taco Pasta

A comforting one-pot dinner that combines bold taco flavors with creamy, cheesy pasta. Everything cooks together in a single pot, creating a rich, satisfying meal that’s perfect for busy weeknights and family dinners.

Ingredients
  

  • Ground beef or ground turkey
  • Short pasta such as shells or rotini
  • Onion and garlic
  • Taco-style seasoning
  • Cooking liquid broth or water
  • Cheese freshly shredded
  • Salt and black pepper
  • Optional additions like beans corn, or fresh herbs

Method
 

  1. Cook the ground meat in a large pot over medium heat until browned and fully cooked. Add the onion, garlic, and seasoning, stirring until fragrant.
  2. Add the pasta and cooking liquid to the pot and stir to combine. Bring to a gentle simmer and cook until the pasta is tender, stirring occasionally.
  3. Lower the heat and gradually stir in the cheese until fully melted and creamy.
  4. Remove from heat and let rest briefly before serving.

Notes

For the best texture, add the cheese off heat or over very low heat. If the sauce thickens too much, add a small splash of warm liquid and stir gently.
