Method
- Place eggs in a saucepan and cover with cold water.
- Bring to a gentle boil, then simmer for 10–12 minutes.
- Transfer eggs to an ice bath and cool completely.
- Peel eggs and slice in half lengthwise.
- Remove yolks and place them in a bowl.
- Mash yolks until smooth, then mix in mayonnaise, mustard, salt, and pepper.
- Fold in most of the chopped bacon, reserving some for garnish.
- Spoon or pipe the filling into the egg whites.
- Top with remaining bacon and a light sprinkle of paprika.
- Chill briefly before serving.
Notes
For extra-smooth filling, press yolks through a fine sieve.
Add bacon just before serving to keep it crisp.
