Million Dollar Bacon Deviled Eggs

Ingredients
  

  • 6 large eggs
  • cup mayonnaise good quality
  • 1 teaspoon yellow or Dijon mustard
  • 6 slices bacon cooked until crispy and finely chopped
  • Salt & black pepper to taste
  • Paprika or smoked paprika for garnish (optional)
  • Optional: 1 teaspoon apple cider vinegar or pickle juice

Method
 

  1. Place eggs in a saucepan and cover with cold water.
  2. Bring to a gentle boil, then simmer for 10–12 minutes.
  3. Transfer eggs to an ice bath and cool completely.
  4. Peel eggs and slice in half lengthwise.
  5. Remove yolks and place them in a bowl.
  6. Mash yolks until smooth, then mix in mayonnaise, mustard, salt, and pepper.
  7. Fold in most of the chopped bacon, reserving some for garnish.
  8. Spoon or pipe the filling into the egg whites.
  9. Top with remaining bacon and a light sprinkle of paprika.
  10. Chill briefly before serving.

Notes

For extra-smooth filling, press yolks through a fine sieve.
Add bacon just before serving to keep it crisp.
