Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack.
Pound chicken breasts lightly for even thickness.
In one bowl, whisk eggs. In another bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
Dip each chicken breast into egg, then press firmly into the Parmesan mixture to coat both sides.
Place coated chicken on the baking sheet. Drizzle or spray lightly with olive oil or butter.
Bake for 25–30 minutes, flipping halfway, until golden and cooked through.
Optional: broil for 2–3 minutes for extra crispiness.
Rest 5 minutes before serving.
