Honey BBQ Chicken Rice

A sweet, smoky, and savory chicken dish simmered in a honey BBQ glaze and served over warm rice. Quick, comforting, and perfect for busy weeknights or meal prep.

Ingredients
  

  • 1.5 lbs chicken breasts or thighs cut into cubes
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 1 tablespoon soy sauce optional
  • 2 –3 tablespoons water to thin sauce if needed
  • 3 cups cooked rice white, jasmine, or basmati
  • Optional toppings:
  • Scallions
  • Sesame seeds
  • Avocado slices
  • Corn or bell peppers
  • Lime wedges

Method
 

  1. Season chicken with salt, pepper, paprika, and garlic powder.
  2. Heat oil or butter in a skillet over medium-high heat.
  3. Add chicken and cook until browned and cooked through.
  4. In a bowl, whisk BBQ sauce, honey, garlic, soy sauce, and water.
  5. Pour sauce over chicken and simmer 5–8 minutes until thick and glossy.
  6. Prepare rice while the chicken cooks.
  7. Serve honey BBQ chicken over rice.
  8. Add scallions, sesame seeds, or avocado for garnish.

Notes

• Thighs stay juicier than breasts.
• Add chili flakes or hot sauce for a spicy version.
• Add vegetables like broccoli, bell peppers, or corn.
• For extra creaminess, mix in 1–2 tablespoons of cream cheese.
