Method
- In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
- Stir in the melted butter and salt.
- Gradually add the flour and mix until a dough forms.
- Knead for 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled.
- Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.
- Bring a large pot of water to a boil, then slowly add the baking soda.
- Divide the dough into 4–6 long ropes. Cut each rope into bite-sized pieces.
- Boil pretzel bites in batches for 30–45 seconds.
- Remove with a slotted spoon and place on baking sheet.
- Brush with egg wash and sprinkle coarse salt on top.
- Bake for 12–15 minutes or until golden brown.
- Brush warm pretzel bites with melted butter before serving.

• Use bread flour for chewier pretzel bites.
• For sweet pretzels, skip the salt and toss warm bites in cinnamon sugar.
