- Preheat oven to 375°F (190°C). Grease a baking dish.
- Heat olive oil in a skillet and brown ground beef with onion until cooked. Drain excess fat.
- Season beef with salt, pepper, and optional spices.
- Arrange a layer of sliced potatoes in the baking dish.
- Spread cooked ground beef evenly over potatoes.
- Spoon cream of mushroom soup evenly on top.
- Sprinkle shredded cheese over the casserole.
- Cover tightly with foil and bake for 45–50 minutes.
- Uncover and bake an additional 10–15 minutes until potatoes are tender and top is golden.
- Rest 5 minutes before serving.
