Method
- Cook egg noodles according to package directions; drain and set aside.
- Heat butter or oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart. Drain excess fat.
- Add onion; cook until softened. Stir in garlic and mushrooms; cook until mushrooms release moisture.
- Sprinkle flour over the mixture; stir to coat evenly.
- Slowly pour in beef broth, stirring constantly until smooth.
- Simmer 5–7 minutes until the sauce thickens slightly.
- Reduce heat to low; stir in sour cream and paprika. Season with salt and pepper.
- Serve warm over cooked noodles.
Notes
Add sour cream off heat or on low to prevent curdling.
A splash of broth loosens the sauce if needed.
