Ingredients
  

  • 1 lb ground beef lean preferred
  • 1 tablespoon butter or olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 2 tablespoons all-purpose flour
  • cups beef broth
  • ¾ cup sour cream
  • ½ teaspoon paprika
  • Salt & black pepper to taste
  • Cooked egg noodles for serving

Method
 

  1. Cook egg noodles according to package directions; drain and set aside.
  2. Heat butter or oil in a large skillet over medium heat.
  3. Add ground beef and cook until browned, breaking it apart. Drain excess fat.
  4. Add onion; cook until softened. Stir in garlic and mushrooms; cook until mushrooms release moisture.
  5. Sprinkle flour over the mixture; stir to coat evenly.
  6. Slowly pour in beef broth, stirring constantly until smooth.
  7. Simmer 5–7 minutes until the sauce thickens slightly.
  8. Reduce heat to low; stir in sour cream and paprika. Season with salt and pepper.
  9. Serve warm over cooked noodles.

Notes

Add sour cream off heat or on low to prevent curdling.
A splash of broth loosens the sauce if needed.
