Greek Chicken Bowls

Fresh and flavorful Greek chicken bowls made with tender marinated chicken, crisp vegetables, and a wholesome base. Easy to customize, perfect for meal prep, and ideal for balanced weeknight meals.

Ingredients
  

  • For the Chicken
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper to taste
  • For the Bowls
  • 2 cups cooked rice or quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes halved
  • ¼ cup sliced red onion
  • Optional toppings: olives fresh herbs, feta-style cheese

Method
 

  1. In a bowl, mix olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper.
  2. Add chicken and coat well; marinate for at least 30 minutes.
  3. Cook chicken in a skillet or grill pan until golden and fully cooked.
  4. Let chicken rest for 5 minutes, then slice.
  5. Prepare the base by adding rice or quinoa to bowls.
  6. Top with sliced chicken, cucumber, tomatoes, and red onion.
  7. Add optional toppings and serve.
