- Cut steak into 1-inch cubes. Halve baby potatoes or cut larger ones into 1-inch chunks. Pat steak dry with paper towels.
- Season steak: In a bowl, toss steak pieces with 1 Tbsp olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper until evenly coated.
- Preheat large skillet over medium-high heat with 1 Tbsp olive oil.
- Cook steak bites: Add steak in a single layer (batches if needed). Sear 3–4 minutes per side until browned and internal temp reaches 130–135°F for medium-rare (or desired doneness). Remove to a plate and tent with foil.
- Cook potatoes: In the same skillet, add potatoes cut-side down. Cook 5–7 minutes until golden, then stir and cook 5–7 more minutes until fork-tender and crispy.
- Make garlic butter: Lower heat to medium. Add butter and minced garlic to the skillet with potatoes. Cook 1–2 minutes until garlic is fragrant (don’t burn).
- Combine: Return steak bites to the skillet. Toss everything together until coated in garlic butter and warmed through (1–2 minutes).
- Serve: Garnish with fresh parsley if desired. Serve hot as is or with your favorite sides.
