- Heat olive oil in a cast iron skillet over high heat.
- Add steak in a single layer (work in batches). Sear 1–2 minutes per side until browned.
- Remove steak and reduce heat to medium.
- Add butter to the skillet; once melted, stir in garlic until fragrant.
- Return steak bites to the pan and toss in the garlic butter.
- Add parsley and lemon juice if desired.
- Serve immediately with potatoes, rice, or vegetables.
