Easy Taco Soup

Ingredients
  

  • 1 lb 450g ground beef
  • 1 medium onion diced
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 3 cups chicken broth or beef/vegetable broth
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes
  • 1 can 8 oz tomato sauce
  • Salt and pepper to taste

Method
 

  1. In a large pot over medium heat, brown the ground beef while breaking it into small pieces.
  2. Drain excess fat, then add the diced onion and sauté until softened.
  3. Stir in the taco seasoning to coat the meat evenly.
  4. Add the broth, black beans, kidney beans, corn, diced tomatoes, and tomato sauce.
  5. Mix well and bring the soup to a gentle boil.
  6. Reduce heat and let it simmer for 10–15 minutes to deepen the flavors.
  7. Taste and adjust seasoning with salt and pepper if needed.
  8. Serve warm with your favorite taco toppings.

Notes

• For a spicy version, add jalapeños, chili flakes, or use hot taco seasoning.
• For a creamy soup, stir in cream cheese, sour cream, or heavy cream at the end.
• Ground turkey or chicken can replace beef for a lighter option.
• Add vegetables like bell peppers, zucchini, or carrots for extra nutrition.
• Serve with tortilla chips, shredded cheese, avocado, or lime for more flavor.
