Easy Low-Carb Chicken Casserole

Ingredients
  

  • 2 boneless skinless chicken breasts, diced
  • 1 ½ cups low-carb vegetables broccoli, cauliflower, or zucchini
  • ½ cup heavy cream
  • 4 oz cream cheese softened
  • 1 cup shredded cheese cheddar or mozzarella
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Heat olive oil in a skillet and lightly cook vegetables until just tender.
  3. Add chicken, garlic, paprika, salt, and pepper; cook briefly until opaque.
  4. In a bowl, mix cream cheese and heavy cream until smooth.
  5. Combine chicken mixture with sauce and transfer to baking dish.
  6. Sprinkle shredded cheese on top.
  7. Bake uncovered for 25–30 minutes, until bubbly and lightly golden.
  8. Let rest for 5 minutes before serving.
