Method
- Preheat oven to 375°F (190°C).
- Cook ground beef in a skillet over medium heat until browned; drain excess fat.
- Add onion and cook until softened. Stir in garlic and cook 30 seconds.
- Season with chili powder, cumin, salt, and pepper.
- Stir in ½ cup enchilada sauce and remove from heat.
- Warm tortillas until pliable.
- Spoon beef mixture into tortillas, roll tightly, and place seam-side down in a baking dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle evenly with shredded cheese.
- Bake 20–25 minutes until cheese is melted and bubbly.
- Rest 5 minutes before serving.
Notes
Don’t overfill tortillas to keep enchiladas intact.
For softer enchiladas, lightly coat tortillas with sauce before filling.
