Easy Ground Beef Enchiladas (Family Favorite)

These easy ground beef enchiladas are rich, cheesy, and full of bold flavor. Made with seasoned beef, soft tortillas, and enchilada sauce, they’re perfect for weeknight dinners or feeding a crowd. Ingredients
  

  • 1 lb ground beef lean
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • Salt & black pepper to taste
  • 2 cups red enchilada sauce divided
  • 8 flour or corn tortillas
  • 2 cups shredded cheese cheddar, Monterey Jack, or blend
  • Optional toppings: sour cream chopped cilantro, diced onions

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook ground beef in a skillet over medium heat until browned; drain excess fat.
  3. Add onion and cook until softened. Stir in garlic and cook 30 seconds.
  4. Season with chili powder, cumin, salt, and pepper.
  5. Stir in ½ cup enchilada sauce and remove from heat.
  6. Warm tortillas until pliable.
  7. Spoon beef mixture into tortillas, roll tightly, and place seam-side down in a baking dish.
  8. Pour remaining enchilada sauce over the top.
  9. Sprinkle evenly with shredded cheese.
  10. Bake 20–25 minutes until cheese is melted and bubbly.
  11. Rest 5 minutes before serving.

Notes

Don’t overfill tortillas to keep enchiladas intact.
For softer enchiladas, lightly coat tortillas with sauce before filling.
