Easy Creamy Lasagna Soup

A rich and comforting creamy lasagna soup made in one pot. All the classic lasagna flavors—savory meat, tender noodles, tomato sauce, and cream—served in a cozy, easy-to-make soup.

Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 24 oz crushed tomatoes
  • 4 cups chicken or beef broth
  • 8 lasagna noodles broken into pieces
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Optional: grated Parmesan or mozzarella for serving

Method
 

  1. In a large pot over medium heat, cook the ground beef until browned.
  2. Add the diced onion and garlic, and cook until softened.
  3. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper.
  4. Bring the soup to a gentle simmer.
  5. Add the broken lasagna noodles and cook until tender, stirring occasionally.
  6. Reduce heat to low and stir in the cream.
  7. Simmer gently for a few minutes until creamy and well combined.
  8. Taste and adjust seasoning as needed.
  9. Serve warm with cheese on top if desired.

Notes

• Stir often to prevent noodles from sticking together.
• Add extra broth if the soup becomes too thick.
• Use sausage instead of beef for a bolder flavor.
• Add spinach at the end for extra freshness.
