Creamy Cowboy Soup

A rich, hearty, and comforting creamy cowboy soup made with simple ingredients and bold flavors. This easy one-pot meal is perfect for cozy dinners, busy weeknights, and satisfying family meals.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can corn drained
  • 1 can beans pinto or kidney, drained and rinsed
  • 1 can diced tomatoes
  • 3 cups beef broth
  • 1 cup heavy cream or milk
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Add onion, bell pepper, and garlic, and sauté until softened.
  4. Stir in corn, beans, diced tomatoes, smoked paprika, and chili powder.
  5. Pour in the beef broth and bring to a gentle simmer.
  6. Let the soup simmer for 15–20 minutes to allow the flavors to develop.
  7. Reduce heat and stir in the cream or milk until smooth and creamy.
  8. Season with salt and black pepper to taste.
  9. Simmer gently for a few more minutes, then serve warm.

Notes

• For extra richness, add shredded cheddar cheese before serving.
• Adjust spice levels by adding more or less chili powder.
• Use ground turkey for a lighter version.
• Add more broth if the soup becomes too thick.
