Creamy Chicken Tortilla Soup

Ingredients
  

  • Oil for sautéing
  • Onion diced
  • Garlic minced
  • Spices such as chili powder, cumin, paprika – per taste
  • Chicken breast or thigh
  • Chicken broth
  • Diced tomatoes with or without green chiles
  • Black beans
  • Corn
  • Cream or half-and-half
  • Crispy tortilla strips for serving
  • Optional toppings: fresh herbs lime wedges, avocado, sour cream (optional)

Method
 

  1. Heat oil in a large pot over medium heat.
  2. Sauté the onion until softened, then add garlic and cook briefly.
  3. Stir in the spices and toast lightly to deepen flavor.
  4. Add the chicken and cook until lightly browned.
  5. Pour in the broth and diced tomatoes; simmer until chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in beans and corn.
  8. Reduce heat, then add cream, stirring gently to combine.
  9. Simmer a few minutes until slightly thickened.
  10. Taste and adjust seasonings as needed.
  11. Serve hot with tortilla strips and desired toppings.

Notes

For deeper flavor, use rotisserie chicken to save time.
Add cream gradually and avoid boiling after adding dairy for smoother texture.
Customize toppings such as shredded cheese, cilantro, avocado, lime or sour cream.
Store leftovers in an airtight container in the fridge for several days or freeze without toppings.
