Cowboy Queso

Cowboy Queso is a rich, creamy cheese dip loaded with seasoned ground beef, peppers, beans, and bold Southwestern flavors. It’s perfect for game day, parties, or anytime you want a warm, hearty dip that keeps everyone coming back for more.

Ingredients
  

  • 1 pound ground beef
  • 12 oz processed cheese cubed
  • 1 cup shredded cheese cheddar, pepper jack, or a blend
  • 1 cup black beans drained and rinsed
  • 1 cup diced tomatoes with green chiles
  • ½ cup red onion finely chopped
  • 1 –2 jalapeños finely diced (adjust to taste)
  • ½ cup beer or beef broth
  • Salt to taste
  • Black pepper to taste
  • Optional red pepper flakes
  • Fresh cilantro for garnish
  • Lime wedges for serving

Method
 

  1. Cook the ground beef in a large skillet over medium heat, breaking it apart until fully browned.
  2. Drain excess grease and season with salt, pepper, and optional red pepper flakes.
  3. Add the beer or broth and let it simmer briefly to build flavor.
  4. Lower the heat and stir in the cubed processed cheese and shredded cheese, allowing it to melt slowly while stirring.
  5. Once smooth, fold in the black beans, diced tomatoes with chiles, red onion, and jalapeños.
  6. Cook gently until everything is heated through and well combined.
  7. Taste and adjust seasoning as needed.
  8. Serve warm with your favorite dippers.

Notes

Melt cheese slowly over low heat to prevent graininess.
Drain beef well to avoid greasy queso.
Add a splash of warm liquid if the queso thickens too much.
Keep warm in a slow cooker for serving at parties.
