Chipotle Ranch Grilled Chicken Burrito

Smoky grilled chicken wrapped in a warm tortilla with rice, cheese, fresh toppings, and creamy chipotle ranch sauce. Easy, filling, and packed with Tex-Mex flavor.

Ingredients
  

  • For the Chicken:
  • 1.5 lbs chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • Salt & pepper
  • Juice of 1 lime
  • For the Chipotle Ranch:
  • 1/2 cup ranch dressing
  • 1 –2 tbsp chopped chipotle peppers or 1 tsp chipotle powder
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • For Assembly:
  • 4 large flour tortillas
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 cup lettuce
  • 1 cup tomatoes or pico de gallo
  • 1/2 cup corn
  • 1/2 cup black beans optional

Method
 

  1. Season chicken with spices, oil, and lime juice.
  2. Grill until cooked through; rest and slice.
  3. Mix chipotle ranch ingredients.
  4. Warm tortillas and prep fillings.
  5. Assemble burritos with rice, chicken, toppings, and sauce.
  6. Wrap tightly and toast until golden.

Notes

• Use thighs for extra juicy chicken.
• Warm tortillas to prevent tearing.
• Skip lettuce for freezer-friendly burritos.
• Adjust chipotle for heat preference.
