Chicken Torta Sandwich

A hearty and flavorful Chicken Torta Sandwich made with seasoned chicken, creamy avocado, fresh vegetables, beans, cheese, and toasted bread. This Mexican-inspired sandwich is filling, customizable, and perfect for lunch or dinner

Ingredients
  

  • For the Chicken
  • 2 large chicken breasts or thighs
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin or paprika
  • 1 tablespoon olive oil
  • For the Sandwich
  • 4 bolillo or telera rolls or sturdy sandwich rolls
  • 1 avocado sliced or mashed
  • 1 cup shredded lettuce
  • 1 –2 tomatoes sliced
  • ½ cup refried beans or black beans
  • ½ cup sliced or shredded cheese
  • ¼ cup mayonnaise crema, or preferred sauce

Method
 

  1. Season the chicken with salt, pepper, and spices.
  2. Heat olive oil in a skillet over medium heat and cook the chicken until golden and fully cooked. Let rest, then slice or shred.
  3. Slice the rolls in half and lightly toast them.
  4. Spread sauce on both sides of the bread.
  5. Layer beans on the bottom half, followed by chicken, cheese, lettuce, tomato, and avocado.
  6. Close the sandwich gently and serve immediately.

Notes

Toasting the bread helps prevent sogginess.
Adjust spice level with chili powder or hot sauce.
Great for using leftover chicken.
