Method
- Heat olive oil in a large skillet over medium heat.
- Add sliced chicken sausage and cook until lightly browned. Remove and set aside.
- In the same pan, sauté onion until soft. Add garlic and cook 30 seconds.
- Stir in orzo and toast for 1 minute.
- Pour in chicken broth and bring to a gentle simmer.
- Cook, stirring occasionally, until orzo is almost tender.
- Add broccoli and return sausage to the skillet.
- Continue cooking until broccoli is tender and orzo is fully cooked.
- Season with salt and pepper.
- Finish with Parmesan cheese if desired and serve warm.
Notes
Add a splash of broth if the orzo absorbs liquid too quickly.
Season lightly—chicken sausage and broth already contain salt.
