Ingredients
  

  • 12 oz chicken sausage sliced (fully cooked)
  • 1 cup uncooked orzo pasta
  • 2 cups broccoli florets
  • 1 small onion diced
  • 2 cloves garlic minced
  • cups chicken broth
  • 1 tablespoon olive oil
  • Salt & black pepper to taste
  • ¼ cup grated Parmesan cheese optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced chicken sausage and cook until lightly browned. Remove and set aside.
  3. In the same pan, sauté onion until soft. Add garlic and cook 30 seconds.
  4. Stir in orzo and toast for 1 minute.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Cook, stirring occasionally, until orzo is almost tender.
  7. Add broccoli and return sausage to the skillet.
  8. Continue cooking until broccoli is tender and orzo is fully cooked.
  9. Season with salt and pepper.
  10. Finish with Parmesan cheese if desired and serve warm.

Notes

Add a splash of broth if the orzo absorbs liquid too quickly.
Season lightly—chicken sausage and broth already contain salt.
