Chicken Burrito Casserole

A hearty, comforting chicken burrito casserole made with tender chicken, rice, beans, and melted cheese — an easy one-pan dinner perfect for busy weeknights and meal prep.

Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 2 cups cooked long-grain rice
  • 1 can 15 oz black beans, rinsed and drained
  • 1 cup corn kernels
  • cups salsa or diced tomatoes
  • cups shredded cheese cheddar or Monterey Jack
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Optional: chopped cilantro or green onions for garnish

Method
 

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, combine chicken, rice, beans, corn, salsa, and all seasonings. Mix well.
  3. Transfer the mixture into the prepared baking dish and spread evenly.
  4. Sprinkle shredded cheese generously over the top.
  5. Cover with foil and bake for 25–30 minutes.
  6. Remove foil and bake an additional 10 minutes until the cheese is melted and lightly golden.
  7. Let rest for 5 minutes before serving. Garnish if desired.
