Method
- Preheat oven to 400°F (205°C). Grease a baking dish.
- In a large bowl, combine the diced potatoes, olive oil, melted butter, ranch seasoning, garlic powder, pepper, and salt. Toss to coat evenly.
- Spread the potatoes in the baking dish and bake for 25 minutes.
- Remove from the oven, add sliced smoked sausage, and mix gently.
- Return to the oven and bake for another 15–20 minutes until potatoes are tender.
- Sprinkle shredded cheddar cheese on top and bake for 5–7 minutes until melted.
- Garnish with parsley or green onions and serve warm.
