Cajun Potato Soup (Creamy & Bold)

Ingredients
  

  • 2 lbs potatoes Russet or Yukon Gold, peeled and diced
  • 3 tablespoons butter
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup milk or half-and-half
  • teaspoons Cajun seasoning adjust to taste
  • Salt & black pepper to taste
  • Optional toppings: bacon bits shredded cheese, green onions

Method
 

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until soft and translucent, about 5 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over the mixture and stir constantly for 1 minute.
  5. Gradually add broth, stirring to keep the mixture smooth.
  6. Add potatoes and Cajun seasoning. Bring to a gentle simmer.
  7. Cook 20–25 minutes, until potatoes are tender.
  8. Reduce heat and stir in milk or half-and-half.
  9. Simmer gently until creamy; mash some potatoes if desired.
  10. Season with salt and pepper. Serve hot with toppings.

Notes

Start with less Cajun seasoning and add more to taste.
Do not boil after adding dairy to keep the soup smooth.
