Cajun Chicken Sloppy Joes

Bold, saucy, and incredibly flavorful Cajun Chicken Sloppy Joes made with ground chicken, bell peppers, onions, and a rich Cajun-spiced tomato sauce. A quick, exciting weeknight dinner ready in under 30 minutes.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 lb ground chicken
  • 1 small onion diced
  • 1 bell pepper red or green, diced
  • 2 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 cup tomato sauce
  • 1/3 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce optional
  • 6 toasted burger buns

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper. Cook for 3–4 minutes until softened.
  3. Stir in the garlic and cook 30 seconds until fragrant.
  4. Add the ground chicken and break it apart with a spoon. Cook until no longer pink.
  5. Season with Cajun seasoning, salt, and pepper.
  6. Stir in the tomato paste and cook 1 minute to deepen the flavor.
  7. Add the tomato sauce, chicken broth, brown sugar, Worcestershire sauce, and hot sauce.
  8. Bring to a simmer and cook for 6–8 minutes until thick and saucy.
  9. Toast the buns for best texture.
  10. Spoon the Cajun chicken mixture onto buns and serve warm.

Notes

• Adjust the heat by adding more or less Cajun seasoning or cayenne.
• For a sweeter balance, increase the brown sugar slightly.
• Serve leftovers over rice, potatoes, or pasta.
• Ground turkey works perfectly in place of chicken.
• Add cheese (Pepper Jack or Cheddar) for a creamy twist.
