Method
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and bell pepper. Cook for 3–4 minutes until softened.
- Stir in the garlic and cook 30 seconds until fragrant.
- Add the ground chicken and break it apart with a spoon. Cook until no longer pink.
- Season with Cajun seasoning, salt, and pepper.
- Stir in the tomato paste and cook 1 minute to deepen the flavor.
- Add the tomato sauce, chicken broth, brown sugar, Worcestershire sauce, and hot sauce.
- Bring to a simmer and cook for 6–8 minutes until thick and saucy.
- Toast the buns for best texture.
- Spoon the Cajun chicken mixture onto buns and serve warm.

• Adjust the heat by adding more or less Cajun seasoning or cayenne.
• For a sweeter balance, increase the brown sugar slightly.
