Bang Bang Fried Rice

Ingredients
  

  • 4 cups cooked chilled rice
  • 2 eggs
  • 2 tbsp oil
  • 3 cloves garlic minced
  • 4 scallions sliced
  • 1 cup mixed veggies
  • 2 –3 tbsp soy sauce
  • 2 –3 tbsp sweet chili sauce
  • 1 –2 tsp sriracha optional
  • Optional: cooked chicken/shrimp/tofu
  • Sesame seeds & lime wedges

Method
 

  1. Heat oil in wok, scramble eggs, set aside.
  2. Sauté garlic and scallions with veggies.
  3. Add cold rice, toss well.
  4. Mix in sauces and sriracha.
  5. Add eggs & protein, toss until coated.
  6. Serve hot with sesame & lime.
