A nourishing chicken dinner bowl built with juicy seasoned chicken, wholesome grains, colorful vegetables, and a light flavorful sauce. Easy to customize, perfect for meal prep, and ideal for busy weeknights.

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 cup cooked rice or quinoa
  • 1 cup mixed vegetables bell peppers, zucchini, carrots
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • Optional toppings: avocado slices fresh herbs, seeds

Method
 

  1. Season the chicken with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium heat and cook chicken until golden and fully cooked.
  3. Let chicken rest for 5 minutes, then slice.
  4. Prepare vegetables by roasting or sautéing until tender but vibrant.
  5. Assemble the bowl with grains at the base, followed by chicken and vegetables.
  6. Add optional toppings and serve warm.

Notes

  • Use chicken thighs for a juicier bowl.
  • Swap grains for greens for a lighter version.
  • Add a light sauce or dressing if desired.
