Method
- Preheat oven to 400°F (200°C).
- Place the feta block in the center of a baking dish.
- Add cherry tomatoes around it and drizzle everything with olive oil.
- Season with garlic, salt, pepper, and oregano.
- Bake for 30–35 minutes until tomatoes burst and feta is soft.
- Meanwhile, cook pasta in salted water according to package instructions.
- Remove the baking dish from the oven and mash the feta and tomatoes into a creamy sauce.
- Add the cooked pasta and toss to combine.
- Stir in fresh basil and lemon juice if desired.
- Serve warm with extra herbs or chili flakes.
Notes
• Greek sheep’s milk feta melts best and gives the richest flavor.
• Add spinach, olives, roasted peppers, or grilled chicken for variations.
• For extra creaminess, stir in 2 tablespoons of pasta water.
