- Season the pork generously with salt and pepper on both sides.
- Heat butter or oil in a skillet over medium-high heat. Sear the pork until golden brown on both sides, then remove and set aside.
- In the same pan, sauté the onion until soft. Add garlic and cook briefly until fragrant.
- Pour in the apple cider, scraping the pan to release browned bits. Let it simmer for a few minutes.
- Return the pork to the skillet, add thyme, reduce heat, and cook gently until the pork is tender and the sauce slightly thickened.
- Meanwhile, boil sweet potatoes until fork-tender. Drain well.
- Mash sweet potatoes with butter and warm milk until smooth. Season to taste.
- Serve pork over mashed sweet potatoes and spoon apple cid
Notes
Use unsweetened apple cider for the best flavor balance.
Let pork rest a few minutes before serving to keep it juicy.
Adjust sauce thickness by simmering longer if needed.
