Apple Cider Pork with Mashed Sweet Potatoes

Tender, pan-seared pork simmered in a lightly sweet apple cider sauce, served over creamy mashed sweet potatoes. This comforting, fall-inspired dinner is easy enough for weeknights yet elegant enough for guests.

Ingredients
  

  • For the Apple Cider Pork
  • 4 pork chops or pork loin slices
  • Salt and black pepper to taste
  • 2 tablespoons butter or olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • cups unsweetened apple cider
  • 1 teaspoon fresh thyme or rosemary
  • For the Mashed Sweet Potatoes
  • 3 –4 medium sweet potatoes peeled and cubed
  • 3 tablespoons butter
  • ¼ –½ cup milk or cream warm
  • Salt to taste
  • Optional: pinch of cinnamon or nutmeg

Method
 

  1. Season the pork generously with salt and pepper on both sides.
  2. Heat butter or oil in a skillet over medium-high heat. Sear the pork until golden brown on both sides, then remove and set aside.
  3. In the same pan, sauté the onion until soft. Add garlic and cook briefly until fragrant.
  4. Pour in the apple cider, scraping the pan to release browned bits. Let it simmer for a few minutes.
  5. Return the pork to the skillet, add thyme, reduce heat, and cook gently until the pork is tender and the sauce slightly thickened.
  6. Meanwhile, boil sweet potatoes until fork-tender. Drain well.
  7. Mash sweet potatoes with butter and warm milk until smooth. Season to taste.
  8. Serve pork over mashed sweet potatoes and spoon apple cid

Notes

Use unsweetened apple cider for the best flavor balance.
Let pork rest a few minutes before serving to keep it juicy.
Adjust sauce thickness by simmering longer if needed.
