4-Ingredient Potato Soup

A warm, creamy, and incredibly easy potato soup made with only four simple ingredients. Ready in under 30 minutes and perfect for busy days, cozy dinners, or effortless comfort meals.

Ingredients
  

  • 4 cups potatoes peeled and diced
  • 4 cups chicken broth or vegetable broth
  • 2 tablespoons butter
  • 1 cup milk whole or 2%
  • Salt and pepper to taste

Method
 

  1. Add the diced potatoes and broth to a large pot.
  2. Bring to a boil, then reduce the heat and simmer until the potatoes are very soft, about 15–20 minutes.
  3. Mash the potatoes directly in the pot to thicken the soup.
  4. Add the butter and stir until fully melted.
  5. Pour in the milk and simmer gently until the soup becomes creamy.
  6. Adjust the consistency with more milk or broth if needed.
  7. Season with salt and pepper to taste.
  8. Serve warm with your favorite toppings.

Notes

• For a smoother soup, use an immersion blender.
• Add cheddar cheese for extra richness.
• Top with bacon, chives, or green onions for a loaded version.
• Use Yukon Gold potatoes for maximum creaminess.
• If reheating, add a splash of milk or broth to restore the texture.
