In a mixing bowl, combine the gluten-free flour and Greek yogurt.
Mix until a soft dough forms.
Lightly flour a surface and knead dough gently for 1 minute.
Divide dough into 4 equal portions.
Roll each piece into a ball, then poke a hole in the center to form a bagel.
Brush lightly with egg wash if using and add toppings.
Place bagels in a preheated air fryer basket.
Air fry at 350°F (175°C) for 10–12 minutes, flipping halfway.
Remove once golden and cooked through. Let cool slightly before serving.
